  1. Get 2 cups boiled maize
  2. Prepare 10 large potatoes

  4. Take 3 table spoons stinging nettle (thabai)

Mukimo (Mashed beans, corn, potatoes and greens). Ndizi (Bananas cooked in banana leaves). Sukuma Wiki (Greens simmered with tomatoes). Mukimo is a Kenyan meal prepared by mashing potatoes and green vegetables.

Steps to make Mukimo:
  1. Peel your potatoes, clean them and put to boil.
  2. Let them boil and make sure they are not soggy.
  3. When they are almost cooked add your already boiled maize and let it warm.
  4. Drain excess water and add the spoonfuls of the stinging nettle.
  5. Add salt to taste then take a mwiko and start mashing all the ingredients together. Mash well to your satisfaction.
  6. You can enjoy as it is or fry it to make it tastier

Mukimo is mostly served as an accompaniment for meat-based stew and nyama choma. That which you call irio is 'mukimo' mostly a kikuyu delicacy 'irio' means food.'mukimo' is the mashed potatoes mix.
