The ingredients needed to make Sattu paratha:
  1. Take Dough
  2. Prepare 2 Cups Atta (Wheat flour)
  3. Get 1/2 teaspoon salt
  4. Make ready 1 Teaspoon Ghee
  5. Make ready 1/2 teaspoon Ajwain(carom seeds)
  6. Take 1 teaspoon Kalonji (nigella seeds)
  7. Get 1/2 Cup water

  11. Get 1 teaspoon garlic paste
  12. Take 1/2 teaspoon Red chili powder

  15. Take 1/2 Cup coriander leaves (chopped)
  16. Make ready 1 teaspoon Mixed Pickle
  17. Make ready 1 Medium Size Onion (chopped)

It's an easy to make recipe and can be served along with sweet and salty tomato chutney, baingan ka bharta or can also be eaten with any kind of pickle as well. Sattu Paratha (Roasted chickpea flour), a favorite of bihar, is a great for any season. Its super-filing and packed with proteins, precisely the reason why most laborers in Bihar eat these parathas, sattu drink in the morning before going to work. Place a portion of the Sattu mixture (approx two tablespoon) in the middle, enfold the filling and pinch off the excess dough.

Instructions to make Sattu paratha:
  1. Take flour in a bowl and start adding salt, ajwain, kalonji, ghee and water to make Dough. Cover the Dough for 30 mins or rest the Dough.
  2. Now start making fillings, take a plate and add there Sattu, chopped onions, chopped coriander leaves, salt, mustard oil, garlic paste, green chillies, red chilli powder, mixed pickle and mix it properly well.
  3. Dough with stuffing (filling)
  4. Now heat a tawa and side by side start making Parantha take a big portion of dough on your palm dust it with dry flour and make a whole in the centre and add there stuffing and close it as shown in the photo. Remove the access Atta.
  5. Now cook it on the heated Tawa if one side done then flip it to other side apply ghee on both the sides. It will increase it's volume when you start cooking Parantha. Repeat the same process in making other Parantha. Then serve it with Chutney, curd.

On medium flame, heat a tawa or flat pan and cook the paratha by applying oil/ghee evenly till both sides are cooked, and are golden brown in colour. Stuffed paratha prepared with chana sattu flavored with pickle masala, onions, fresh coriander leaves, green chili, and carom seeds, etc. is sattu paratha. Sattu is a very popular bihar food.
