The ingredients needed to make Doi Begun:
- Take 8-10 baby eggplants
- Make ready Stuffing -
- Take 1 tsp. panch phoron powder (equal quantity of fennel, mustard, cumin, fenugreek & nigella seeds)
- Make ready 1 tsp. red chili powder
- Take 1/2 tsp. turmeric powder
- Get to taste salt
- Take Gravy -
- Get 4 tbsp. mustard oil
- Take 1 " cinnamon stick
- Take 2-3 green cardamoms
- Get 4-5 cloves
- Take 2 bay leaves
- Make ready 1 dry red chili
- Make ready 1 mace
- Take 1 tsp. cumin seeds
- Prepare 1 onion, chopped
- Prepare 1 tsp. ginger-garlic paste
- Get 1 tsp. cumin powder
- Take 1/2 tsp. turmeric powder
- Get 1 tsp. coriander powder
- Prepare 1 tsp. garam masala powder
- Prepare to taste salt
- Prepare 1 tsp. red chili powder
- Prepare 1 cup yoghurt
- Make ready 1 tbsp. coriander leaves, chopped
This version of Doi Begun is healthier than the traditional deep-fried one. Doi Begun is a Bengali preparation in which the main ingredient is eggplant. Slice eggplant Β½ cm thick, wash and drain water, and wipe out with papper towel. Mix turmeric,chilli,coriander, salt (less than ΒΌ tsp) to eggplant.
Steps to make Doi Begun:
- Rinse the eggplants and pat dry. Make a slit lengthwise on each of them. In a bowl, mix together all the mentioned ingredients meant for the stuffing.
- Smear some of the stuffing in the slits of the eggplants. Heat 2 tbsp. oil in a kadai / pan and fry the stuffed eggplants by covering with a lid, till they are almost cooked. Flip them over gently at intervals.
- Remove them on to a plate with a slotted spoon.
- Heat remaining oil & temper with bay leaves, dry red chili, cinnamon, - cardamoms, cloves, mace & cumin seeds. Saute for a few seconds.
- Then add the onion and fry till it turns light brown. Add ginger-garlic paste & all dry spices mixed with some water.
- Add the yoghurt and give it a stir. Drop in the fried eggplants & some water. Cover & simmer on a med. flame for 4-5 minutes.
- Switch off the flame and add the coriander leaves. Serve as a side dish with - plain steamed rice or any flat bread.
