- Make ready 2-3 cups water for cooking dried peas
- Prepare 1 tbsp oil
- Take 1 tsp cumin seeds/jeera
- Make ready 1 tsp chat masala
- Make ready 1/2 tsp roasted cumin powder
- Take 1/2 tsp dry mango powder/amchur
- Take 1/2 tsp red chilli powder/lal mirch
- Take 1/4 tsp garam masala
- Take 2 tbsp Jaljeera powder
- Get For topping:-
- Take 1 Onion chopped small sized
- Make ready 1 Tomato chopped medium sized
- Take 1 Lemon
- Get 1-2 Green/red chillies slit

- Put maida, baking powder, baking soda, salt, sugar in a big bowl and mix everything well.
- Now add curd, oil and little water to dry ingredients.
- Start kneading the dough using little water at a time. Make a soft and smooth dough.
- Cover the dough with a kitchen towel. Let the dough ferment for 2 hours.
- Let's prepare matar curry.
- Steps for preparing matar curry:-
- Soak the white peas in enough water overnight or for 7-8 hours.
- Drain the water next day and pressure cook the white peas with 3-4 cups of water.
- Cook for 2-3 whistles or until matar are completely cooked.
- Mash the matar slightly with wooden spoon.
- In a pan heat oil on low-medium flame.
- Add cumin to hot oil and saute until cumin turns brown.
- Turn off the heat and remove the pan from gas.
- Now add chat masala,cumin powder,amchur powder,red chilli powder and garam masala to the sauted cumin seeds.
- Stir and immediately add pour the mixture to cooked matar.
- Turn on the heat and cook matar for 3-4 minutes.
- Now add jaljeera powder and mix well.If the matar mixture looks dry add little water.
- Cook the matar till all the flavours are mixed properly for About 2-3 minutes.
- Keep matar aside while you prepare kulchas.
- Steps for preparing kulcha:-
- Heat a tava on medium flame.
- Make a small ball of dough,sprinkle some kalonji on ball.
- With the help of rolling pin roll into small kulcha.
- Sprinkle few chopped coriander leaves on rolled kulcha.
- Place kulcha on hot tawa.
- Apply ghee/oil when kulcha is half done.
- Cook the kulcha till it get golden spots and is evenly cooked.
- Prepare all the kulcha same way.
- Before serving top matar with chopped onion,tomatoes,chilies and squeeze some lemon juice on top.
- Delicious matar kulcha is ready to serve.
