- Dough: in a bowl mix maida, salt, sugar and oil all together then add warm water to make a soft dough. Keep aside and let it rest for 30 mins.
- Meanwhile in a mixer jar add green peas, chillies and salt to make a fine paste.
- Heat oil in a pan then lower the flame, add nigella seeds, hing and stir then add ginger paste and a little water and saute for 2 mins, then add pea paste to it and cook on medium flame till the paste forms a dough like consistency. Keep aside to cool.
- Make small balls from the dough. Make smaller balls of the pea dough.. then make wells in the dough to fill with the pea filling.. close properly and make small size puris…. (oil the rolling pin and rolling board, then gently roll out puris applying very less pressure so that the filling doesn't come out)
- Heat oil for frying in a kadhai, then lower the flame to medium and then deep fry the kachoris… splash oil from all sides to the kachoris to puff it up… fry till golden and serve hot along with aloo dum.
