  2. Take Dash milk

Cook pasta according to package directions. While pasta is cooking, heat a cast iron skillet to medium high. Add pancetta and saute until fat begins to render. Drain the pasta and put back into the pasta pot or a pasta bowl.

  1. Fry bacon first in a pan until crispy(ish). Add spinach, the dash of milk and the Gorgonzola and turn heat real low. The cheese and the milk should make a nice creamy sauce
  2. Cook pasta on the side. When ready (al dente) through pasta in the pan and mix it altogether.

Pour sauce over pasta and mix. Good and creamy, this is an impressive pasta dinner that comes together very easy. I used large rigatoni which allowed for ample cheese sauce coverage. Cook at medium temperature until fat has been rendered out of pancetta and is crispy. With a slotted spoon take Pancetta out and set aside.
