  7. Lightly poach the mixed fruit in with all the other ingredients except the corn flour & passion fruit, for about 5 minutes (you want the fruit soft but not breaking down to a mush)
  8. Strain the juice from the fruit & place it back on the stove, mix the corn flour with a little water & add to the poaching liquor, you should end up with a liquid that's not too thick but isn't watery. Add back into the fruit mix with the passion fruit.
  9. Place the fruit mix in your desired serving bowl, sprinkle liberally with the honey nut mix. Place in the oven for 3 minutes. Serve with creme fraiche & honeycomb on top (optional)
